Raw Mango Pickle (Launji)

What is Kacche Aam Ki Launji..?

It is a sweet and sour relish or a sweet chutney made by cooking raw mangoes and jaggery.

Along with mangoes and jaggery, I have used various Indian spices such as hing, kalonji (nigella seeds) and red chilli powder to make this dish.

Aam Ki Meethi Launji is really easy to make as well.

There are different recipes to make this chutney in each household and with a little difference here and there, the taste changes slightly, making it a family special.


Kacche Aam Ki Launji is an instant sweet and sour relish or pickle made by cooking raw mangoes and jaggery. This recipe is a must make when raw mangoes are in season. You can make a big batch and refrigerate for a few days and keep enjoying your meals. Summer is here and what is the best thing about it, of course, Mangoes. And if you are eating mangoes this Summer, then trust me you are surely doing your health right. Mangoes not only help in reducing cholesterol but they are also good for our eyes and skin. Mangoes increase our immunity and smoothen the process of digestion. Mangoes are a versatile fruit that can be used to make many recipes, from curries to pickles, to desserts, and many more recipes.




Ingredients -

  • 4 raw mangos/kachchi kairi chopped

  • 1/2 cup gud or jaggery

  • 3 tbsp Oil

Spices

  • 1 dalchini/cinnamon

  • Bay leaf

  • 4-5 laung/cloves

  • 2-3 kali mirch/ black pepper

  • 1/2 cup water

  • 1 tbsp Fennel seeds

  • 1/2 tbsp Coriander seeds

  • 1/2 tbsp Fenugreek seeds

  • 1/4 tsp Asafoetida (Hing)

  • 1/2 tbsp Turmeric powder

  • 1 tbsp Salt to taste

  • 1/2 tbsp Garam Masala

  • 1/2 tbsp Red Chilli powder


Instructions -

  • Wash and peel raw mangoes. Cut them into similar sized lengthwise pieces and keep aside.

  • Heat oil in a pan. Add the bay leaf, cinnamon, cloves, coriander seeds, asafoetida, fennel seeds, fenugreek seeds, black pepper. Allow them to sputter for 30 seconds. Add the raw mango pieces and mix with the spices.

  • Add turmeric powder, water and salt. Mix well.

  • Cover and cook till raw mango are soft.

  • Add crumbled jaggery and red chilli powder, garam masala and mix well.

  • You can cook for a couple of minutes more if you want your aam ki launji to be thicker.

  • Take it off the heat. Store in an airtight jar in the fridge and enjoy with your meals.
