What is Egg Curry..?
Egg Curry or Anda Curry is a spicy onion tomato based Indian curry which goes very well with any Indian Bread.
It is a delicious combination of boiled eggs in a rich tomato onion gravy.In this curry, Eggs are shallow fried in mustard oil before adding into the thick tomato gravy. You can add simple boiled eggs too.
These eggs are added into an inviting tomato onion gravy which is spiced with ginger, garlic and basic everyday spices such as coriander powder, Kashmiri red chilli powder, turmeric powder, garam masala powder and salt.
7-8 Boiled Eggs
Grevy Preparations :
2 Medium Onions
1 Big Tomato
2 Green Chillies
4-5 Garlic Cloves Ginger
Frying Process :
4 tbs Oil
2 tbs Red Chilli Powder
1/2 tbs Turmeric Powder
1 tbs Coriander Powder
1/2 tbs Garam Masala
Salt to Taste
1 Glass Water
Coriander Leaves for Garnishing
Boil egg with adding some salt in it. After boiling cool it and peel off the shells.
For gravy take medium sized onions, tomato, green chillies, garlic cloves and ginger and make thick and smooth paste.
In a pan take oil and add bay leaf. Then add the gravy and mix.
Add red chilli powder, turmeric powder, coriander powder, garam masala, salt and give it a good mix. Cook it till it leaves oil.
Add boiled eggs with a cut in between. Then add glass of water and mix well.
Cook till water is boiled. Garnish with chopped coriander leaves.
