Kharvas (New Colostrum Recipe)

What Is Kharvas..?

Kharvas is an Indian milk pudding made from cow or buffalo colostrum, the first form of milk produced within one or two days of giving birth. It originates in the western Indian state of Maharashtra. It is also popular in the states of Karnataka (Ginnu Haalu in Kannada) and Andhra Pradesh (Junnu Paalu in Telugu).

It is prepared by steaming a mix of colostrum, milk, and jaggery or sugar until it coagulates into a jiggling solid. Cardamom, saffron, nutmeg or sesame is added for flavoring.

Ingredients -

  • 2 cup Cow colostrum

  • 1 cup powdered sugar

  • 1 tbsp Cardamom powder

Instructions -

  • In a bowl take cow colostrum milk, then add powdered sugar and cardamom powder whisk well with no lumps.

  • Now place a greased plate in a steamer and pour the prepared milk in it. Sprinkle some cardamom powder on top.

  • Cover and steam for 10 minutes. After 10 min let cool and cut in pieces.

  • Tasty Kharvas, Cheeka is ready.
