Sitafal Rabdi (Custard Apple Pudding)
What Is Rabdi..?
Rabri is a sweet, condensed-milk-based dish, originating from the Indian subcontinent, made by boiling milk on low heat for a long time until it becomes dense and changes its colour to off-white or pale yellow. It is chilled and served as dessert.
Rabri is made by heating sweetened milk in a large open vessel (kadhai). As the layer of cream begins to form on the surface of the milk, it is taken off and kept aside. The process continues until the milk is exhausted.
1 lts Milk (full fat)
1 cup Sugar
1/2 tbsp Cardamom powder
1 bowl Custard apple pulp
In a pan take milk and stir till it comes to a boil.
Boil milk till it becomes thick.
Then add sugar and cardamom powder and stir well.
Now turn off the flame and let it cool for 1 hour.
After 1 hour the milk gets more thicken and then add sitafal / custard apple pulp and mix well.
Add pistachio and almond slivers and mix.
Tasty Sitafla Rabdi is ready to serve.
